I went and viewed this recipe that you gave us the link. It looks like it is a super great dish. I want to try and make it, when I can get all the ingredients here. I am however, unfamiliar with cooked soba (about 10 ounces uncooked buckwheat noodles). Do all stores carry these soba noodles or uncooked buckwheat noodles? What do I look for in the store and where might they be located? Pasta isle, rice and grain isle, refrigerated area...? Kathy, I would appreciate any help you can offer.

Hi Amykee1, most big grocery stores carry soba or buckwheat noodles in the Asian section - usually they are sold dry. I find Roland's brand in the King Soopers (Kroger) store near where I live. If you want gluten-free soba, Eden Foods makes a 100% buckwheat soba (but it's a bit pricier than the typical buckwheat & wheat noodle).
You can also buy soba noodles online - Amazon carries a number of brands.
If you live near a Whole Foods, chances are they would carry soba noodles as well.
If you live near a Japanese market, you would likely find it there as well.
Let me know what you find! I would like to try other brands of soba so your question has made me think about ordering soba online!

Great dinner...Budda bowl, shrimp, roasted red and yellow peppers,cucumber, riced couliflower and avocado. Dressing so easy, .50 cup yogurt, 1 1/2 tablespoon Dijon mustard and 1 teas. Sriracha sauce! So good!

I have a household of different eaters, so I made multiple things;
Homemade keto egg bread with leftover fajita chicken for the keto eater
Slow cooked, chili and lime spiced pulled pork butt, drained of fat, half an Avacado with a tsp lime juice for me
Beef stroganoff and corn for everyone else
Lettuce, tomato, olive salad for everybody (dressing and topping differs according to person)

I am NOT getting paid to say this but “Run Fast Cook Fast Eat Slow” from Shalene Flanagan is amazing. Although calorie counts are not listed on these recipes, you can enter the ingredients into MyNetDairy and create the calorie calculation that way. The point for me was to eat power foods which would work for me.

Just checking in with you. Are you under a doctor's supervision for this diet plan? I am concerned you will not get all the nutrients you need and that you are aiming for rapid weight loss. I am new here and am trying hard to lose weight. I had rotisserie chicken wrapped in Romaine lettuce leaves and pico de gallo. For dessert, I had 7 medium strawberries. It was delicious!
