I didn't even think to mention that we used brown rice in the recipe. We don't own any white rice! It is a trigger for me, especially with the pressure cooker. Did you know you can make rice pudding in under 10 minutes with that thing?

Burgers tonight...grassfed 90/10 beef on whole wheat buns, with toppers of sautéed mushrooms and onions.


Tonight - leftover lamb (very lean) stew with a salad. Later meeting at a brewery bar - thinking of how to control calories with beer. Might go with a light beer.


Homemade beef vegetable soup for us. I'm guessing it has about the same calories as Progresso's does. Also a new recipe: coconut flour flatbread as a grilled cheese sandwich to go with the soup. Ixnay on the flatbread. I did not like it--it tasted like scrambled eggs instead of bread.

Oh well, you never learn without trying.


What!!!??? There are calories in beer? Oh man, I'm never gonna get this diet thing. <wink>

The lamb sounds good. I wish I could get my wife to try it, but she tells me that she can't eat lamb because they are too "cute." I say they are tasty and that's good enough for me.


DavidDD, why not try socca? You can make it two ways -- crispy/crunchy or more like a pancake. The crispy crunchy way is my favorite: 1:1 ratio of garbanzo bean flour and hot water, with a tablespoon or two of olive oil per cup of flour. Let it hang out in the fridge for an hour or so, give it a stir, then pour it into an oven proof (slightly greased) skillet on high heat on the stove. Let the edges "set" (you'll see them bubble), and then pop the skillet in a hot oven (420) for 15 or 20 minutes, or until the top looks dry and crusty and the edges are golden brown. Flip it out onto a plate and treat it like corn chips or a baked tortilla.

You can use it for a pizza crust, too, though I've never tried it. To make it more flatbreadish, use your favorite pancake recipe, but swap out the garbanzo bean flour measure for measure, and cook it on the stove.

I want to find me some tortilla racks for baked shells and make me some taco shells out of it. We can't have corn because my DD is allergic to it.

Tonight we're having fried chicken tenders ... yes, I know, complete diet buster, but at least I make them at home and I don't add calories by adding bread crumbs or eggs or milk. I just dredge them in flour and fry them in hot oil. I'll round it out with sautéed okra, sweet potatoes and butter beans.


This is a great thread! I didn't do light beer - I just couldn't. I had 1 glass of Riesling instead.

Tonight we have (lower fat) sicilian spaghetti sauce, whole wheat spaghetti, a little romano cheese, salad, and maybe just water or 1% milk. You can see my sauce if you click on my nickname and go into my Page (via web program), and find "KAI Sicilian Spaghetti Sauce."


Kathy, it looks like we are having the same dinner tonight. Whole wheat spaghetti here, with canned marinara and Italian Sausage. For a side we are having a frozen baby vegetable blend. Your sauce looks interesting; I'll have to try it sometime. Pasta is really tough for me because of the carbs.

I'm glad you didn't do light beer. When I was diagnosed type 2, my doctor told me to avoid beer when I can, not that I was a big beer drinker. I would have maybe one six-pack in a year. Now I have maybe 2 beers in a year. My doc told me that if I drink, I should stick to the hard stuff and severely limit my intake. So, I do scotch and bourbon instead. <grin>
