I made a variation of the pancake recipe for breakfast this morning. Simply exchange 2 oz. cream cheese for the almond flour and yogurt (make sure the cream cheese is soft).
This version tastes like a combination of cheesecake and pancake. Yummy, and still very low carb.

Last night I made French Onion soup... We used thin slices of sourdough bread toasted with mozzarella in place of the usual cheesy top.
Today I'll have to hoard some calories...we're supposed to have fried chicken for supper. Aack!

But the cheesy top is what makes it good! <grin>
We went out to eat,and I struggled with how to enter food from a restaurant. I ended up with a cheeseburger, coleslaw, and a big plate of salad from the salad bar.
Today is another family dinner. Since the rest of the family wants beef-n-noodles with mashed potatoes (way too many carbs for me), I'm making Mala Green Beans with grilled chicken for me.

Tonight is Cauliflower and Celery root soup with raw kale salad. I have to make up for saturday night!
I use Ina Garten recipe but no cream or croutons. The kale salad is a bunch of kale from my garden rinsed, destemmed, and very finely chopped. I squeeze a tablespoon of olive oil and squeeze of lemon and add a pinch of dill. A little shredded carrot or diced cucumber are nice additions. Are usually improvise with what I have in my fridge.

And SenoritaSkinnyBraids, that kale salad sounds good ... But I'll pass on the celery root since I'm allergic to celery. :) I can't eat fennel root either, though it was tasty before I had my allergic react.
Tonight we're having Fettuccine Alfredo, which I'll round out with sautéed kale. Or maybe kale chips.

Mala Green Beans are Szechuan style. They are deep fried, drained and then served in a very spicy brown sauce often with a protein. I made 2 lb. beans with 1 lb chicken breast.

K8sMom: if you decide to try it Guy Fieri's recipe is similar to mine. I don't use peanuts or parsley, and I add a protein (ground pork is traditional in China, but I like grilled chicken breast better). http://www.foodnetwork.com/recipes/guy-fieri/szechuan-green-beans-recipe.html

Last night was cubed steak and gravy, homemade mashed potatoes, cabbage from the freezer and green beans from the freezer. I tried to keep my plate half full of the cabbage and beans. I still didn't get my full calorie deficit in, and it doesn't look like I will today, either. But I'm got to try.
Tonight is meatless ... Turnip greens and 5 minute Pressure Cooker Mac n cheese.

Tonight for me is a throwback to my grade school cafeteria lunch days. Open faced pizza burgers! They are sort of like a sloppy joe; ground beef with jarred pizza sauce over a slice of Texas toast with Mozzarella on top (browned in the broiler). It is definitely not diet food, but I was good the rest of the day and had room in my calories budget for 2 slices. Side dish was mixed vegetables.
Yummy.
