Tonight I splurged and bought a nice fillet of wild salmon. Plate: 4 oz cooked salmon + 1 cup steamed broccoli + 1 medium baked sweet potato + 5 fl oz glass of cabernet. I'll have salad too in a little while (likely with EVOO and balsamic vinegar).

I love salmon for it's simplicity. It's also high in protein and omega-3 fatty acids (e.g. DHA and EPA).

Last night we were supposed to have grilled chicken tenders, mashed rutabagas and okra. But DH has a cold, so I made homemade chicken noodle soup in the pressure cooker instead. I packed it with as many immune boosting veggies as possible: a whole onion, two clove of garlic, carrots, and mushrooms, plus spices like rosemary, oregano, and basil. I even added a pinch of turmeric in there, and no one was the wiser. :)

They liked it, but of course DH fondly recalled his mom's chicken noodle soup -- which was Campbell's. :p

Tonight we're having homemade moo goo gai pan. I have shrimp in the freezer and I splurged and bought bok choy. (Or should I be more clear to most Chinese and use the Mandarin qing jiang cai? :) )

My crew will want fried rice. Sigh. I'll have to cook it and freeze it to cool it off because I forgot to make extra earlier in the week.

Tonight I was in a huge rush and did the easiest dinner ever. Gourmands, don't read this post!

I placed 3 thawed chicken boneless skinless breasts (sliced so the pieces were smaller) in a baking dish along with 1 can of Campbell's Healthy Request Cream of Mushroom soup, about 6 oz slized Baby Bella mushrooms, 2 tsp of good quality sweet smoked paprika, and 1/4 tsp freshly grated black pepper. I covered the baking dish and baked at 350F for 45 minutes. It was surprisingly tasty. Had it with leftover broccoli.

Next time, I think I will bake it for maybe 30 minutes covered, and then 15 minutes uncovered so that a little more liquid can evaporate.


The Sunday family dinner today is Cottage Pie. I was afraid that it was crazy high in calories and carbs, but it really isn't too bad.

Last night was a caloric disaster ... We celebrated my dad's b-day, and he wanted smoked Boston butt with sides of baked beans and potato salad. I make my own baked beans, but the recipe does call for lots of added sugar in ALL forms: brown, maple syrup, and molasses.
O_o

As if that wasn't bad enough, my step mom made pound cake with whipped cream and strawberries. Even with common sense portions, the meal ran me 1350+ calories.

BUT one good thing came out of it...My dad had found me a stationary bike at an auction for $18. It is a small one with hand grips that move, so you work your legs and your upper body.

I used it this afternoon while I watched a 30 minute show, and I burned 123 calories according to my Fitbit! This means I can exercise no matter the weather or time of day.


Oh, supper tonight is a baked potato bar. My folks will probably have bacon, but I intend to make it a meatless meal. Last night's pork was enough for two meals at least!


Supper tonight will be pasta with jarred sauce. Got me a food mill at a thrift store, though, and when tomatoes come back in season, I intend to can my own sauce. I do need to invest in a new gasket and gauge for my mom's old pressure canner. But that way I can save $$ and control added salt and sugar, yet still have that weeknight convenience. Plus, I like canned foods because they are shelf stable, and freezers are power defendant. I like to can what I can and freeze what I must. :)


We are having made from scratch Minestrone soup tonight with a salad for the side dish.

Back to making dinners. Tonight we're having spaghetti squash with tomato sauce (homemade canned from our garden) with chicken sausage.
