Justjennie, what's your canning recipe? I'm determined to can sauce this year!

I'm just having leftover quick chicken mushroom bake + sauteed spinach + salad. Maybe 1 glass of wine too. Homemade minestrone soup sounds delicious!
I never got into canning since I can't have a garden where I live.

We just process the tomatoes from the garden as you would if you were going to can them (the "recipe" is in the Ball Canning book. It has LOADS of information). Then we make the sauce on the stove and transfer it to crock pots and let it cook for a day.
We put pretty much whatever in it. If we have other veggies that have come up like eggplants, squash etc. we'll put that in there and make more of a veggie sauce. We used to just can the tomatoes but since we pretty much use it for sauce we started doing that instead. I like knowing what's in my food!

Tonight I'm going to make a stir-fry over pad Thai noodles. I'm going to put bean sprouts, baby portabello mushrooms, cabbage, eggs broccoli, and tofu. I was going to use some of the Goose from the other night but that's going to be made into a pot pie and put in the freezer for meals. :)
It's going to be tough trying to scale down the stir-fry for 2 people.

We're having BBQ beef sandwiches on Brownberry 100% whole wheat buns, with mixed vegetables on the side. Add a slice of cheddar and I'm good to go. Unfortunately, I can't have more than one bun to keep under my carb limits.

Wow, I'm getting hungry reading your posts. Okay, I'm trying a new soup recipe tonight: Fix It & Forget It's "White Bean Fennel Soup." I followed the recipe as written except that I added dried rosemary and 1 hot italian sausage link to the recipe. It makes a ton of servings so I am not concerned about the extra sauage calories & sat fat. I'll let you know how it tastes tomorrow!

I agree, Kathy! These meals sound yum! Do you use actual fennel root in your soup? I couldn't eat that, due to my celery allergy, but I do tolerate a small amount of fennel seed. (Weird, since the seeds often trigger reactions in most with celery FA, but I'll take it!)
DavidDD, I've never BBQ'd beef - we're from the south, so BBQ means pork, unless you say BBQ chicken. :)
Justjennie, can you freeze leftovers? That would turn a labor intense meal into a quick weeknight supper.
Last night, we had copycat Chipotle's burrito bowls with socca. Tonight we're having pan-roasted chicken thighs, oven roasted carrots and butterbeans. I'll probably cook cabbage from my freezer stock to round it out.

K8sMom2002 - usually I do freeze the leftovers. The recipe made just about 3 servings -- husband DID have some more but in his defense he didn't eat much yesterday -- and it was pretty easy to make.
Tonight I'm going to make salads. I haven't made one in a long time. I have to reign myself in a bit because I tend to put anything I can find in them lol.

K8sMom: LOL, I hear ya! I used to live in the south (SC, FL, and AL) so I understand. As a Yankee right now I have to admit it is far too cold to consider firing up the Weber to smoke a brisket. So I cheat.
What we call BBQ beef sandwiches are really just a beef roast (Rump roast this time) cooked in a slow cooker with liquid smoke and other spices, then shredded and liberally coated with jarred BBQ sauce. We let it sit for a few hours then bake a second time. Served warm on a bun with cheese.
Tonight we are having no-pasta spaghetti. That means just the sausage links and marinara sauce. Low carb, but still tasty.

AAACK! A thunderstorm meant I couldn't use my oven, so I had to rearrange my supper plans. The chicken got cooked in the pressure cooker, and I skipped the beans and carrots and opted for a quick tomato soup made from jarred tomatoes to go with the cabbage.
Justjennie, at least your DH indulged in healthy fare! And DavidDD, my DH says the only time it makes sense to get near a grill IS in the dead of winter. ;)
I haven't used liquid smoke in a while, not since my DD was diagnosed with food allergies. Hmh ... Wonder if it's safe for her?
