What's for dinner at your place?? Topic


Welcome to Joe! That's a great pantry/fridge supply for lots of tasty dinners. What veggies do you round things out with?

Kathy, I skipped the salad ... The only dressing available was ranch, which is a powerful amount of calories for such a little bite. So o just had two pieces of pizza.

Tonight was another unhealthy meal ... Sausage dogs and French fries. Again I tried to eat light for lunch and I opted to swap out the bun for a slice of whole wheat bread and a half serving of the sausage. I ate a small serving of fries.

Tomorrow it's back to menus my way ... I bought two bunches of beets, and I plan to cook them for part of our supper tomorrow night.

It turned out really well. My wife and I both loved it. It was not *quite* wheat dough crust, but close enough that the end result really tasted like Pizza. In some ways, it was even better than wheat dough since there is actually more flavor in the cauliflower crust (due to the added spices).

It is not necessarily low-calorie food even with the cauliflower crust, but it is decidedly low carb! For diabetics like me that is a godsend.


Wow, DavidD! My sis needs some low carb "junk food" for her DH, who has cancer that is affecting his thyroid and adrenal glands ... He doesn't want to give up his junk food, but she wants to get as little refined carbs in him as possible. I'll definitely share your link with her!

Last night we had meatloaf, beets and their greens, English peas and mashed potatoes... Not a slim meal, but I compensated at lunch and limited myself to a half serving of meatloaf and potatoes.


That cauliflower pizza crust looks delicious. Have you entered it into MyNetDiary yet? I'd be curious about the calories and nutrition. Still, if you made a veggie pizza, I bet it is reasonable. Thanks!


I did enter it. It is called "David's Cauli-Pizza." The entry was for a plain cheese pizza, and for Saturday's dinner I had pepperoni with it. I added the pepperoni as a second entry line. I think my three slices were about 450 calories and 4 g Carb.


I use the calorie estimator from here for my recipe estimates: http://www.caloriecount.com/cc/recipe_analysis.php. I find it easier to use than the one here because I can cut and paste the entire ingredients list for analysis, rather than one line at a time.


Last night was spaghetti and jarred pasta sauce jazzed up with mushrooms, onions and peppers.

Tonight is DIY Chipotle's Burrito Bowl, albeit without the guac and a much more reasonable portion size. I use black beans, brown rice, fresh cilantro and spices and one chicken breast to create enough for two family-sized meals. I'll round it out with kale chips.


Oh! A tip I found online: to make brown rice as quick to cook as white, soak it in water for 8 hours or overnight. Discard the water, and cook with the usual proportions, etc.


Tonight was homemade tomato soup with a ham sandwich. Sandwich was one slice of brownberry whole wheat, crackers with the soup.


DavidDD, what are some good low carb crackers that I can recommend to my sis and her DH?

Tonight is NOT a healthy supper: chicken salad sandwiches. The hat tip to healthy is that we use whole wheat bread, and I'll serve kale chips and sliced tomatoes with it.
