I made this recipe a couple times and the chickpeas weren't as crispy as I would like (one of the times I burned them because I cooked them longer at a higher temperature). I made them again the other day and had a fortunate "accident": after 15 minutes of the first baking I had to leave so I had to take them out of the oven and let them sit. That turned out to be a fabulous mistake. Below is the recipe:
INGREDIENTS:
2 Cans Chick Peas
Olive Oil (about 2-6 TBS. You'll use about 4 TBS for the first part)
1/4 Cup Maple Syrup
Cayenne Pepper
Cinnamon
Salt
COOKING:
Preheat oven to 400 degrees
Drain and rinse chick peas
Put chickpeas on a towel and pat dry with a paper towel (some of the skins may come off. That's perfectly fine. Just pick them out and discard them)
Put chickpeas in a bowl with 2 tablespoons olive oil
Toss to coat
Line baking sheet with parchment paper or tin foil. Spread coated chickpeas on pan. Place in preheated oven and cook for 10-15 minutes, tossing after 10 minutes.
Remove from oven and let sit 2-3 hours.
After they have sat 2-3 hours, heat oven to 400 degrees again, put chickpeas in bowl and toss with more olive oil and return to pan. Bake for 30 minutes, tossing every 10 minutes so they don't burn.
Remove chickpeas from oven and decrease oven temperature to 325.
In bowl combine olive oil, maple syrup and spices. Add chickpeas and toss to coat. Return chickpeas to pan and put in oven. Bake 30 minutes, tossing every 10 minutes so they don't burn.
After 30 minutes, check chickpeas to see how crunchy they are. If they're still a little soft, bake a little longer (I baked mine approximately 8 minutes longer).
Remove, let cool and enjoy!!
This "mistake" made them come out super crispy. You can toss them with anything. I made a batch and tossed them with salt, Parmesan and garlic powder. It's a really delicious and healthy snack.
