Homemade granola bar meets cookie. With whole-food ingredients and natural sweeteners, you can't go wrong as a snack or dessert.

  • Preheat oven to 375F. Spray a baking sheet with cooking oil.
  • In a large bowl, mash banana.
  • Chop apricots and add to bowl along with raisins, jam or preserves, oats, walnuts, and salt. Stir to mix well.
  • Scoop out about 1 tbsp of batter for each drop. You should be able to make 12 drops.
  • Bake for 15 minutes. The bottoms will be nicely browned but the tops will be quite light in color. Remove from oven and cool for a few minutes. Serve and enjoy!

Tips:
The use of 1 tbsp of regular jam or preserves contributes only 1 gram of added sugar per drop. You can use sugar-free jam or preserves if you prefer.

If you prefer a less sweet taste, replace the jam with chia gel (1 tsp chia seeds soaked in 2 tbsp of water for 10 minutes).
